Anne’s focus is on preparing creative fine-dining dishes, using contemporary techniques and ingredients that originate in the countries where she has lived and the very many she has travelled to. You will primarily experience European and Asian dishes but she can take you to the cuisines of countries like Mexico or Ethiopia on request. Colleagues call Anne a global citizen, which is truly reflected in her dishes. She is adamant about using natural, healthy, and high-quality food! Direct replacements of meat and cheese – often highly processed – do not find a way to her kitchen.

Anne develops her menus a few days in advance to source the freshest and most premium ingredients. Most guests enjoy the omakase style, and to be surprised on the day itself, but please connect with Anne to discuss any preferences. Here are some sample dinner menus:

Wicked seed cracker canapes with nut cheeses, hummus, black and green olive tapenade, gravad lox and orange pearls, mushrooms and dukkha
Smoked beetroot carpaccio
Tomato consommé and dehydrated tomatoes bruschetta
Grilled green asparagus and mushrooms on a bed of mushroom-infused black rice and chantarelle sauce
Celeriac patty on cashew nut sauce, topped with a vegetable and flower garden 
Grilled peaches with vanilla gelato and mango sriracha caramel
Pimped Edamame
Wasabi-infused avocado dip and wicked seed crackers
Soba and cucumber noodles in sesame ginger dressing
Selection of sushi and miso soup
Teriyaki tofu with grilled leeks and white miso sauce
 Grilled lion mane with lotus root and green vegetables
 Black sesame ice cream with berries
